VERS, which means "fresh" in Dutch, is a nod to chef-owner Jonathan Haffmans' Dutch heritage plus the restaurant's culinary dedication to in-house, freshly made offerings. Chef Haffmans' approach uses modern techniques and innovation along with classic disciplines of the culinary arts. He works with local and regional farmers, fishermen and purveyors of edible goods to share their products with guests.
